Mini-strawberry cheesecakes

I think it was about time that I finally try out to make a cheesecake recipe!
And this was a really good decision! These mini-strawberry cheesecakes turned out dangerously delicious and super creamy! 

It’s also a super eye-catcher for gatherings and dinners as it has this wonderful color-swirl!

Für 12 Mini Cheesecakes

Ingredients:

  • 200 g cream cheese

  • 250 g regular quark

  • A pinch of salt

  • 100 g sugar

  • 2 eggs

  • 32 g vanilla pudding powder

  • 4-5 medium strawberries

  • 1 tsp strawberry powder (optional)

  • 1 tablespoon agave syrup

Directions:

  1. Preheat the oven to 180 degrees. Beat the eggs with the sugar and the salt until foamy. Then add the rest of the ingredients and mix well. 

  2. Wash and crush the strawberries, add about 1 teaspoon of agave syrup and 1 teaspoon of strawberry powder and continue to mix well.

  3. Grease a muffin tin and fill it with cheesecake batter, then add the strawberry puree with a spoon on one side and carefully form a small swirl with a chopstick in a circular motion.

  4. Place in the oven for 30 minutes and let it cool down for about 10 minutes.
