Mango-Shrimp Quinoa Power Bowl

This Power-Bowl is full of healthy, tasty and colourful Ingredients.

This beautiful dish gives you that extra kick of energy you sometimes need to feel balanced, light and ready to keep going in whatever you are doing.
Easy to make, convenient for meal-prepping and simply so good! 

Ingredients:

  • 1 mango

  • 1 avocado

  • 250 g shrimps

  • 4-5 large radishes

  • half a cucumber 

  • 100 g quinoa

  • 1 garlic clove

  • Salt 

  • Pepper

  • Oil 

  • Lemon peel

  • spices of your choice

  • Mango powder

  • Sunflower seeds

  • Black Sesame 

For the Dressing:

  • 130 g mango (half a mango)

  • 9 tablespoons rape oil

  • 5 ES White wine vinegar

  • 4 ES honey

  • 2 ES Mustard (medium hot)

  • 1 tsp mango powder 

  • Pepper

  • Salt

How to:

  1. Boil the quinoa in 150 ml of water for 8 minutes, stirring occasionally, leave to stand for another 5 minutes, then leave to cool. 

  2. Cut the vegetables into bite-sized pieces. 

  3. Defrost the prawns in lukewarm water for at least half an hour, then pat them dry a little. Heat some oil of your choice in a frying pan and grill the prawns for 2 minutes on each side, add salt, pepper and spices and finally squeeze a garlic clove.

  4. For the dressing, put half a mango in a blender jar. Add the remaining ingredients and puree well until a creamy consistency is obtained. 

  5. Finally, roast a few sunflower seeds in a pan for about 1-2 minutes, stirring constantly, until golden brown (Make sure to check it, because it can burn fast!)

  6. Prepare the bowl and top with sunflower seeds and black sesame seeds plus dressing.
