Protein Pancakes

It’s January and we want to start off the new year with some good resolutions, one of them is to eat healthy food! This protein pancakes with blueberries and maple syrup are not only easy to make, they are also low-carb and full of protein and healthy ingredients.
They’re best served warm and fresh for breakfast, but you can also eat them as a snack or dessert!

Makes 8 small pancakes:

Ingredients:

  • 40 g vanilla protein

  • 6 tablespoons soy yogurt

  • 6 tablespoons oatmeal

  • 2 tablespoons coconut flour

  • 2 eggs

  • add some milk or water (I used oat soy milk)

  • 50 g of blueberries

  • maple syrup

How to:

  1. Mix all the ingredients together. If the consistency is still too firm, just add a dash of water or milk.

  2. Add a little coconut oil to a pan and bake on low-medium heat.

  3. Spread into small blobs, bake cookies evenly about 5 min on each side until golden brown.

  4. Topping as desired. I used organic blueberries and dark maple syrup!
