Lemon Brownies

Have you ever tried lemon brownies? 

A fruity pastry that melts in your mouth and very quickly makes you addicted to it.

The lemon zest gives these tasty bites an extra dose of freshness.

Besides the great taste, they are also very quick and easy to make.

Ingredients:

  • 150 g soft butter 

  • 130 g sugar

  • 3 eggs

  • Zests of 2 lemons 

  • Juice of 2 lemons (Keep 3 tbsp for the icing)

  • 180 g flour


Icing:

  • 100 g icing sugar

  • 3 tbsp of lemon juice 


Instructions:


  1. Mix the butter and sugar for about 2 min. Add the eggs and mix well. 

  2. Add the lemon juice and zests and finally add the flour.

  3. Pour the dough in an oven-safe form and bake for 25 min. on 180 degree Celsius. 

  4. Once the cake is out of the oven, let cool down for about 10 min. then pour over the icing coat and let it sit for another 10 min. 

Tip:  in an airtight container you can keep the lemon brownies fresh for at least a week,
