Asian asparagus-chicken salad

It's that time of the year again, spring is here and so is the asparagus season!

To celebrate the season, here's a delicious chicken asparagus salad for you made with special canadian products from Mélody’s Canada.

I created a super delicious and light recipe for asparagus lovers. The dish was refined with Camelina oil and pure maple syrup from Canada.
A few words about Camelina oil: Camelina oil gives a soft taste to your dishes. Its balanced aromas are reminiscent of asparagus and herbs with notes of sesame and hazelnut.

It is a cold-pressed oil, rich in omega-3 fatty acids and vitamin E and It is excellent with salads, vegetables, fish dishes, etc.

For 2 servings

Ingredients:

  • Chicken breast fillet (approx. 300g)

  • 400g green asparagus

  • 1 romaine lettuce

  • Approx. 8 radishes

  • ½ cucumber

  • A handful of coriander

  • A handful of peanuts

  • 1 lime

  • Salt

  • Pepper


    For the marinade:

  • 2 tbsp. maple syrup

  • 1 tbsp. soy sauce

  • 2 cloves of garlic

  • 1 tsp chili flakes


    For the salad dressing:

  • 2 tbsp. gold of pleasure oil

  • 2 tbsp maple syrup

  • 3 tbsp. lime juice

  • 1 tbsp. soy sauce

  • ½ tsp chili flakes


Preparation:

  1. Add maple syrup, soy sauce,chili flakes and crushed garlic to a small bowl and then brush the chicken breast fillet with the marinade and add salt and pepper on top.

  2. Wash the asparagus and remove its woody ends and then cut.

  3. Add about 1 tablespoon of gold of pleasure oil to the pan and fry the asparagus at a higher temperature for 5-8 minutes, turning it several times.

  4. In the meantime, wash and chop lettuce, cucumber, radish and cilantro and pound the peanuts into small pieces in a mortar.

  5. Put the asparagus aside and clean the pan briefly (e.g. with a kitchen towel). Now add about 1 tablespoon of gold of pleasure oil to the pan and fry the meat at medium temperature for about 5-6 minutes.

  6. Arrange the salad with the meat and garnish with peanuts and pour dressing over it. Season the salad with salt and pepper.

  7. Enjoy!
