ButternutāSpinach Quiche
Serves 8 | Prep time: 35 min | Total time: ~1 hr 45 min
Ingredients:
250 g flour (type 1050)
130 g butter (soft)
3 eggs (size M)
Salt
200 g butternut squash
1 onion
1 garlic clove
100 g baby spinach (fresh)
200 g heavy cream
Pepper
optional: thyme
Youāll also need:
A grater, salad spinner, and a 24 cm quiche pan.
Instructions:
Prepare the dough:
Combine flour, butter, 1 egg, salt, and 1ā2 tbsp water until smooth. Shape into a ball, cover, and chill for 30 minutes.Cook the vegetables:
Peel and grate the squash. Finely chop onion and garlic. Sauté everything in oil for 5 minutes, then add spinach until wilted. Let cool slightly.Preheat oven to 200°C (180°C fan). Grease and lightly flour your quiche pan.
Roll out the dough on a floured surface, press into the pan, and prick with a fork. Prebake for 10 minutes.
Make the filling:
Whisk 2 eggs, cream, salt, pepper, and thyme if you have. Spread the vegetable mixture on the crust and pour the egg mixture on top.
Bake for 25ā30 minutes until set.
