Aromatic Carrot-Cupcakes

Sometimes Happiness is only a Cupcake away. 

Matching with the season I have a beautiful Cupcake recipe for you folks!
Super aromatic and fruity, these cupcakes are very tasty and it’s perfect to bring with you for a coffee-date with your family or friends, or to enjoy on cold and rainy autumn 🍁 🍂 days with a tasty Tea (I would recommend a London Fog! =  Black Tea with Milk and vanilla syrup or more healthy alternative: with honey) while watching one of your favourite Netflix soaps or while reading a good book!!!
These comforting cupcakes don’t really feel like a sin, because they have quite a healthy touch with ingredients like: carrots and pineapples.

Ingredients: 

  • 200 g carrots

  • 200 g soft butter

  • 110 g sugar

  • 1 pinch of salt

  • 3 eggs

  • 110 g grounded almonds

  • 150 g flour

  • 2 tsp of baking soda

  • 1/2 freshly rasped nutmeg

  • 1/2 tsp of cinnamon powder

  • 2 tbsp of coconut grating

  • Rasped organic orange rind

  • 100 g pineapple pieces (from can)

  • 3 tbsp of cashews

  • 150 g cream cheese (the most creamiest)

  • 2 tbsp freshly pressed orange juice

  • 4 tbsp powdered sugar

what you also need: Muffin-Tin for 12 muffins + 12 cupcake paper forms

[ If you feel like it: 100 g Blueberries for a Blueberry-Topping + perfect to eat while your baking ;]

Directions:

  1. Preheat the oven to 180 Celsius = 356 F. Peel carrots and rasp finely. Stir 50 g of butter with Sugar and salt until creamy. Stir in eggs bit by bit. Mix the almonds with flour, baking soda and nutmeg and stir in quickly to the egg-mass. Let drain the pineapple and add to the dough with the carrots.

  2. Put the paper forms in the muffin tins and pour in the dough. Bake for 25 min in the Oven.
    Put out the cupcakes and let it cool down a bit, then dig out the cupcakes from the forms and let cool.

  3. Chop the cashews and roast until golden then let cool. Stir 150 g Butter with the cream cheese, orange juice and powdered sugar until creamy. Put cream in a pastry bag (you can find good & cheap ones at Dollarama for example! And splash gently on your cupcakes.
    Finally sprinkle cashew nuts on top of your Cupcakes or add Blueberries like I did ;)
