Nordic Matjes Salad

As a girl coming from Hamburg, it's finally time for a nordic recipe: Matjes Salad.
Maybe you know this delicious, mild fish, which is very often served in a bun or in a salad.
It is considered a nordic specialty.
Its origin comes from the Netherlands, where herring are fished before maturity, that then mature together with enzymes in a brine.
This is an old traditional production process.
Matjes has a large part of omega-3 fatty acids and influences the body in a positive way, e.g. it stimulates the metabolism, reduces the risk of cardiovascular diseases and has a favorable influence on the cholesterol level.
I have to add that the capers are a very important component in this dish as they give a nice touch to it!
You can serve this dish as an appetizer or main course.
For 4 Servings
Ingredients: 
- 4 big potatoes 
- 200 g Matjes Filet 
- 2-3 tbsp capers 
- 1 yellow onion 
- Hand full of dill 
- Hand full of parsley 
- White vine vinegar 
- Extra virgin olive oil 
- Salt 
- Pepper 
How to:
- Peel and boil the potatoes the day before or in the morning and let cool down then cut into mouth-friendly pieces. 
- Cut the fish in small pieces. Peel the onion and cut into thin stripes when leave in a bowl of water to make them milder. 
- Chop parsley and dill and leave some whole leafs for the decoration. 
- Gently Mix all the ingredients together. Add extra virgin olive oil and white vine vinegar. 
- Season with salt and pepper. 
Eet smakelijk. :)
