Asia Bowl with Asparagus
I’m fully embracing the asparagus season and thought why not prepare and serve this lovely vegetable in a Bowl.
Who doesn’t love bowls? They give us all the energy and nutrients we need for a day!
fresh and crisp vegetables, tasty soba noodles and an amazingly tasty dressing makes this asian inspired asparagus bowl so fun to eat! here in Germany we are experiencing a kind of strange spring.. some days feel more like we’re back in February.
But hey! This lovely rainbow bowl is going to make you feel like it’s summer already!
Ingredients:
- 500 g green asparagus 
- 100 g soba noodles 
- 1 carrot 
- 1/2 bell bell pepper 
- 1/2 zucchini 
- 1 avocado 
- 1 green onion 
Dressing:
2 tablespoons tahini
- 1 garlic 
- 1 tbsp soy sauce 
- 1 tbsp maple syrup 
- 1 tbsp rice vinegar 
- 1 tbsp sunflower oil or oil of your choice 
- 1 tsp black sesame seeds 
How to:
- Peel the green asparagus and cut off the woody ends, then cut into thirds. Then cut the carrot into small sticks and the zucchini into spirals. 
- Cut the avocado and the bell pepper into strips, quarter the lime. 
- Cut the green onion into fine rings. 
- Sauté the asparagus in olive oil for 10-12 min and season with salt and pepper. 
- In the meantime, put the water on for the soba noodles and cook them in the boiling water for 4 min and then drain them (Stir with a little olive or sesame oil in the pot, this will prevent the noodles from sticking together). 
- Sauté half of the green onion along with the zucchini and carrot for about 3-5 min and season with salt and pepper as well. 
- For the tahini dressing, chop the garlic into very fine pieces and mix well the tahini paste, garlic, soy sauce, maple syrup, sunflower oil, black sesame seeds and rice vinegar. 
- Arrange all the ingredients in a bowl, add the other half of the green onion fresh over the bowl and pour the dressing over it.
